Report on Collection of Rules on Use of Recipe Calculation Procedures Including the Use of Yield and Retention Factors for Imputing Nutrient Values for Composite Foods

This report - completed on behalf of the EuroFIR Consortium – provides specific guidance to support the recipe calculation procedures recommended by EuroFIR in which weight yields are applied at recipe level and nutrient retention factors are applied at the ingredient level. This document provides an overview of nutrient retention factors in the context of the EuroFIR food classification and the cooking methods available in the LanguaL thesaurus (Facet G) and recommendations and calculation procedures for weight yield factors.
