Joanne Arsenault is an Associate Project Scientist in the Institute for Global Nutrition at the University of California, Davis, where she also obtained a PhD in nutrition with an emphasis in international nutrition. She has been conducting dietary intake surveys and analysis in the US and internationally for 29 years. She has worked on dietary intake surveys as part of research studies in Peru and Bangladesh using weighed record observations, and recently conducted a validation study in Burkina Faso of 24-hour recalls compared to weighed records with adolescents. She has been involved in all aspects of dietary assessment, including planning survey design, designing tools and analysis programs, compiling food composition tables and recipes databases, and data cleaning and processing. She has extensive experience with analysis of usual nutrient intakes and adequacy and in the interpretation of dietary intakes.
